Slow Cooker Barbecue Ribs



This is an accumulation of several recipes, and the ingredients that we used when we made them.  The only thing I would probably change is the chili seasoning.  I used 1 ½ tsp. of chili seasoning because I had an open pack, but I would use chili powder next time, and probably between 2 tsp. to a tablespoon to start with.  They were really good & tender!!

3 – 4 pounds beef or pork ribs (or roast if you prefer)
½ tsp. garlic salt
½ tsp. pepper
1 cup ketchup
¼ cup brown sugar
½ cup honey
¼ cup spicy brown mustard
2 Tbsp. Worcestershire sauce
½ Tbsp. liquid smoke
1 Tbsp. apple cider vinegar
1 ½ tsp. chili seasoning

Preheat oven to 400 degrees.  Season ribs with salt & pepper.   Place in a shallow baking pan.  Brown in the oven 15 minutes.  Turn over, and brown another 15 minutes; drain fat.  In a medium bowl, mix together the remaining ingredients.  Place ribs in the slow cooker.  Pour sauce over ribs, and turn to coat.  Cover and cook on low 6 – 8 hours, or until ribs are tender.

Veggie Steak Fajitas from Healthy Cooking

Note: I haven't tried this yet.

1 beef top sirloin steak (1 pound) thinly sliced
2 tsp. ground cumin
1/8 tsp. salt
3 tsp. canola oil, divided
1 large onion, julienned
1 small sweet red pepper, julienned
1 small green pepper, julienned
2 Tbsp. minced fresh cilantro
4 whole what tortillas (8 in.) warmed

Optional ingredients: Shredded lettuce, chopped tomato & reduced fat sour cream

1. Sprinkle beef with cumin & salt. In a large skillet, saute beef in 2 tsp. oil until no longer pink. Remove & set aside.
2. In the same skillet, saute onion & peppers in remaining oil until tender. Stir in cilantro. Return beef to pan & heat through.
3. Spoon onto tortillas; fold in sides. Serve with lettuce, tomato & reduced fat sour cream, if desired.

1 fajita (calculated w/o optional ingredients = 11 grams fat

Barbecue from Doris Ertel

Notes: I use this recipe all the time. I really like the flavor, and it is great with cole slaw! I do not add any salt.

1 lb. hamburger, or cooked beef, chopped
1/2 tsp dry mustard
1 tsp. paprika
1 tsp. chili powder
1/4 cup onion, chopped
2 Tbsp. vinegar
3 Tbsp. brown sugar
1 cup tomato juice

Brown hamburger, if used. Drain off the fat (I also rinse it). Add remaining ingredients and simmer 1/2 hour. Add salt to taste.

Beefy Rice and Beans

Beefy Rice and Beans (my own brain)

Notes: I tried making this today, and it smelled AMAZING. The taste was delicious...but the rice FLOPPED big time. I've never made crunchy rice before today, but this stuff is a crunchy munch. However, if it wasn't crunchy, it'd be delicious!

1 cup uncooked rice
2 cups water
1 packet Lipton Onion Soup Mix (I use the onion soup mix spices listed below)
  • 8 tsp. dried minced onion
  • 1 tsp. onion powder
  • 4 tsp. beef boullion
  • 1/4 tsp celery salt
Combine rice, water, and spices. Cook according to rice directions.

1/2 lb. ground beef
1 can red beans

Brown ground beef. Add beans.

After rice is finished cooking, add beef and beans to the rice.

Simple Sloppy Joes

Notes: I love this recipe. It's better than any mix I've ever had.

2 lbs. ground beef (I almost never put this much in.)
1 large onion (I also usually don't put this much in since I precook my beef with onion)
2 garlic cloves, minced
1 8oz can tomato sauce
1 6oz can tomato paste
1/2 c. ketchup
1/3 c. packed brown sugar
2 tbsp soy sauce
buns, bread, etc.

In a skillet, cook beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in tomato sauce and paste, ketchup, brown sugar and soy sauce; mix well. Bring to a boil. Reduce heat; cover and simmer 15-20 minutes, stirring occasionally. Spoon about 1/2 c. meat mixture onto each bun.

Crockpot Hamburger Soup

- 10/9/2010: This was DELICIOUS and SO EASY (especially since I cook my ground beef and freeze it). I didn't add the diced tomatoes for obvious reasons, and I halved the recipe. I also only cooked it for 6 hours and added the green beans and potatoes a couple of hours before we were going to eat it. I think you could use real potatoes and just put them in from the start if you wanted too, but the canned ones worked just fine and were yummy. I really enjoyed it.

* 1 whole Onion, Chopped
* 2 pounds Hamburg, Fried
* 3 cans (14 Oz. Can) Beef Broth
* 2 cans (15 Oz. Can) Kidney Beans
* 2 cans (8 Oz. Can) Tomato Sauce
* 1 can 28 Oz. Can Diced Tomatoes
* 2 teaspoons Dried Parsley
* 1 teaspoon Dried Basil
* ½ teaspoons Thyme
* ¼ teaspoons Pepper
* ½ teaspoons Salt
* 1 Tablespoon Chili Powder
* 1 can (14.5 Oz. Can) Diced Potatoes
* 1 can (14.5 Oz. Can) Green Beans, Diced Or String

Add all ingredients to a crock pot, except the potatoes and green beans. Cook on low for about 6 hours, stirring about every 30 minutes or so.

After the 6 hours, add the diced potatoes (drained) and the green beans (drained), and cook for another 2 hours on low.

Serve with crackers or bread, whichever you prefer. The spices in this recipe complement the ground beef, and it is really good. Believe me, before I tried, I never thought a soup made with ground beef would have any flavor.

Skillet Tacos

Skillet Tacos

* 1 pound ground beef
* 1 small red onion, chopped
* 1 1/2 cup frozen corn
* 10 corn tortillas (6 inches), cut into 1-inch pieces (I use my pizza cutter to do this)
* 1 bottle (8 ounces) taco sauce (I used mild)
* 1-1/4 cups shredded cheddar cheese, divided

1. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
2. Rinse frozen corn in a colander with warm water and drain.
3. Add the drained corn, taco sauce, and 1 cup cheese to meat until well mixed.
4. Mix in tortilla pieces and heat through.
5. Sprinkle with remaining cheese. Serves 5-6

BBQ Ribs

  • 1 cup water
  • 1/2 cup soy sauce
  • 3 lbs. baby back ribs
  • 1/2 cup Shirley J BBQ sauce mix, plus extra to season ribs
  • 1 1/3 cup root beer (just a little less than a can I used the MUG brand)
  1. Season ribs with Shirley J BBQ seasoning. You want a good even coating. Place ribs in fridge for 2 hours.
  2. In a broiler pan, place the water and soy sauce in the bottom of the pan. Place the insert of the boiler pan on the pan. Your gonna create a nice steam bath for this ribs.
  3. Place ribs on the pan. Completely cover the ribs in the pan with aluminum foil. You want it nice and sealed to keep that steam in there. Cook in a 200 degree preheated oven for 4-6 hours. low and slow is the trick here folks.
  4. Meanwhile in a saucepan, combine the root beer and 1/2 cup Shirley J BBQ Sauce Mix together and simmer for five minutes. Set aside until ribs finish in oven.
  5. Remove ribs from pan and brush all over with about 2/3 cup of the bbq sauce.
  6. Place the ribs on a preheated grill. We keep the temp in between high and sear. You want to get the sauce to coat the ribs and get a little charred. Cook for just a few minutes on each side. Serve with remaining sauce. Enjoy. Serves 4.

Beef & Barley Soup

1 3/4 cups beef broth
1 cup water
1 tsp. dried parsley flakes
1 can diced tomatoes, undrained
1 1/2 cups cooked roast beef
1/2 cup diced celery
1/2 cup chopped onion
1/2 cup diced carrots
2 cups shredded cabbage
1 cup diced raw potatoes
1 can green beans, drained
3 tbsp. barley
1/4 tsp. pepper

Combine all ingredients into a crock pot, and mix well to combine. Cook on low for 8 to 10 hours. Stir well before serving.
